Bring a little warmth into your life with this spicy red pepper and sweet potato soup. Admittedly I have stolen this recipe from my Mum (with a few little extra things thrown in) but it is so quick, easy and tasty I think it is worth a mention on my blog. Oh yes my blog, how I have missed you. 2015 was such a crazy rollercoaster of a year I forgot what you looked like! So here marks my first and second new years resolutions – write more blog posts and eat healthily.
Its dark, it’s dreary, the festivities are over, most people I come across have a cold (including myself) so it clearly makes sense to make a big steaming pot of delicious goodness to replenish some much needed vitamins and minerals.
2 medium sized onions
2 large red peppers
5 medium sized sweet potatoes
2 cloves of garlic
3 red chillies (or less if you don’t want it too spicy)
A small piece of fresh chopped ginger
A pinch of hot smoked paprika
A pinch of ground coriander
A pinch of oregano
1 tablespoon of tomato puree
1 bag of rocket
A splash of Lea & Perrins
Beef stock ( 2 Knorr stock pots)
Salt and Pepper
Using a tiny amount of oil fry the onions until soft and then add the garlic, red peppers and chillies and fry for another couple of minutes.
Add the chopped ginger, paprika, coriander and oregano and fry for another minute.
Add the beef stock with approximately 2 pints of water, the sweet potatoes, tomato puree and Lea and Perrins, Boil on a medium heat until the potatoes are soft.
Add in the rocket and cook for another minute then take it off the heat and use a hand blender to whizz it all up.
Now I can’t resist a little badness (no matter how good I want to be) so throw in a dollop of crème fraîche and et voilà! 🙂
