Tomato, Mozzarella and Basil Rice Salad

As the days get warmer and longer its time to start making summer food. Whoo hoo, roll on BBQ season. This really easy and delicious rice salad recipe is a great accompaniment to chicken or fish, or simply enjoy it on its own. The splash of raspberry balsamic adds a touch of sweetness that the kids love.

Ingredients

500g long grain white rice
3 large tomatoes
1/3 of a cucumber
2 spring onions
150g Mozzarella
Handful of basil leaves
Extra virgin olive oil
Raspberry balsamic vinegar
Salt and pepper

Method

Cook the white rice according to the packet instructions and set aside.

Roughly chop the tomatoes, cucumber and mozzarella and add to a mixing bowl.

Finely chop the spring onions and basil leaves and add to mixing bowl.

Add a dash of oil and a generous splash of vinegar.

Mix well together and season to your liking.
